About us

The German Bakehouse was formed on the Sunshine Coast in sunny Queensland in 2012 and has moved from Noosa to Cooroy before establishing its commercial bakery in Coolum Beach in 2018. Sven Noack is our owner and he is a third generation master baker originating from Berlin who celebrated 35 years in the baking industry in 2022. Sven's commitment to quality and freshness is unparalled and has earned the German Bakehouse a wonderful reputation in South East Queensland.

About the Owner

Sven Noack (Owner & Master Baker)Sven is a third generation master baker originating from Berlin, Germany. He began his apprenticeship at the age of 17 in his grandfather’s bakery. Over the next five years, he worked fulltime training under his grandfather’s watchful eye and learned the skills and recipes of the past generations. At the age of 23, he became a certified Master Baker and was named the youngest person in Germany to qualify for such a title.
On September 1st, 2017, Sven celebrated 30 years in my baking career. Over these years, Sven had the pleasure of taking his skills internationally. He travelled to Canada and America gaining valuable experience learning new techniques, modern recipes and bakery management skills. After that, he moved to Japan where he stayed for seven years running a German style bakery in one of the most popular areas in Tokyo. Sven met his wife while living there and they decided to begin their lives together in Australia.
Upon his arrival in Perth, Sven began working for a franchised bakery where he became quite knowledgeable about the Australian culture, food and types of bakery products. After one year of living in Perth, the Noack family moved to the Sunshine Coast and Sven began the journey of running his own company, The German Bakehouse.
Sven's wife and two young children enjoy helping with the business and he looks forward to passing on his baking knowledge to the next generation, as his family did before him.

How We Make Our Bread

Nestled in the quiet town of Coolum, every night a hive of activity takes place where our skilled bakers are busy mixing, kneading, shaping and baking. We showcase some of the finest and freshest German sourdough in the Sunshine Coast area and Brisbane region.
Starting from humble beginnings, our company has grown tremendously over the past ten years. The German Bakehouse has over 120 wholesale customers throughout the Sunshine Coast, Hinterland, Gympie and Brisbane area. On average, we make and deliver upwards of 10,000 freshly baked loaves per week. We also attend and supply 10 market stalls per week where we enjoy getting to know our customers by name and receive lots of wonderful feedback.
The sourdough bread and handmade rolls are made from Australian wholegrain flour and baked slowly to seal in the healthy goodness. Using authentic German traditions, our dough’s proofing occurs over a 48 hour process which is hard to find anywhere else in Australia. Our sourdoughs contain a particularly high level of fibre as well as essential vitamins and minerals. They are a good source of carbohydrate, completely free from any artificial additives, preservatives, egg or dairy product. We have gluten free options available and provide catering and delivery on special requests.
